Position Overview

The AM Bar Lead oversees daytime bar operations, ensuring high beverage standards, fast-paced service, and smooth day-to-day coordination. This role is responsible for opening the restaurant and bar, supervising daytime takeout orders, collecting shift checkouts, coordinating shift coverage and call-outs, maintaining beverage pars, and collaborating with leadership on recipe costing and menu development.

Key Responsibilities

  1. AM Opening & Floor Readiness
  • Complete full AM opening procedures for the restaurant and bar (walk-through, unlocking doors, bar well setup, juice/prep par checks, and draft line inspection).
  • Ensure the bar is fully prepped, stocked, and organized for seamless daytime turnover into the evening shift.
  1. Shift Coverage & Call-Out Resolution
  • Serve as the first line of contact for bar team call-outs and attendance issues during the shift.
  • Actively coordinate shift coverage by contacting off-duty staff or adjusting floor stations, keeping management informed of coverage solutions before seeking manager escalation.
  1. Takeout & Delivery Oversight
  • Monitor incoming daytime takeout, delivery, and online orders via the POS.
  • Coordinate with the kitchen and bar to verify order accuracy, proper packaging, tamper-evident seals, and timely handoffs to guests and third-party delivery couriers.
  • Manage order modifications, 86'd items across third-party platforms, and direct guest takeout inquiries.
  1. Shift Checkouts & Reconciliation
  • Collect end-of-shift checkout slips and closing reports from daytime floor staff and bartenders.
  • Audit checkouts for completeness (e.g., verifying all open tables/tabs are closed and tip adjustments are finalized) and organize paperwork for management review.
  • (Note: No direct till balancing, bank deposits, or cash management required).
  1. POS, Comps & Voids
  • Utilize supervisor-level POS permissions to perform authorized line-item comps, discounts, and item voids.
  • Generate and submit a shift comp/void report to management at the end of each shift detailing reasons and totals for all adjustments.
  1. Cocktail Development & Beverage Costing
  • Formulate, recipe-test, and batch daytime beverage/cocktail offerings in collaboration with management.
  • Calculate and maintain recipe costing to meet target beverage COGS, subject to final approval by the F&B Director.
  1. Inventory & Par Management
  • Partner with management to conduct weekly/monthly beverage inventory counts.
  • Monitor stock rotation (FIFO), minimize waste/spoilage, and report ordering needs.

EDUCATION AND EXPERIENCE

Minimum of High School education 

Minimum of two (2) years in restaurant/bar experience leading shifts without supervision

Certification in bartending preferred

Alcohol awareness certification preferred

KNOWLEDGE, SKILLS AND ABILITIES

Ability to communicate effectively verbally 

Team player 

Ability to exceed expectations of guests and team members 

Ability to multi-task

Ability to work flexible hours and shifts

Knowledge of local alcohol serving practices and standards

Knowledge of federal and state labor laws as well as local health and sanitation laws and regulations
