General Manager

General Manager, Artisan Bakery & Cake Shop, Hackney E8, Monday to Friday, up to £50k
Location: Hackney, London E8
Hours: Full time, Monday to Friday, business hours

The role
Be the most senior person on site at one of London's most respected independent bakeries. You'll run the whole operation day to day and work directly alongside the founder and Executive Chef.

What you'll do

• Take full accountability for the daily running and performance of the bakery and its second site
• Own the site P&L: revenue, GP, wastage, labour and overheads, delivering agreed targets with the owner
• Line manage the Head Chef, Café Manager, Events Manager and Sales Assistant through regular 1:1s
• Lead all HR processes, from recruitment, onboarding and training to performance reviews and policy
• Oversee finance processes with external accountants, including payroll, supplier invoices and expenditure
• Approve rotas and forecast labour around seasonal peaks
• Plan production capacity with the Head Chef across the café, celebration cakes, the second site and events, using sales data
• Lead stock control, ordering and waste reduction
• Manage health and safety, site maintenance and contractors
