Los Mochis London City is looking for a talented and driven Sushi Chef de Partie to join our flagship rooftop restaurant at 100 Liverpool Street.
This is an exciting opportunity for a Sushi Chef de Partie to work in a high-end, high-volume kitchen, delivering exceptional sushi within one of Londons most innovative restaurant concepts.

Located on the rooftop of 100 Liverpool Street, Los Mochis London City offers:
14,000 sq ft restaurant space
3,000 sq ft outdoor terrace

Los Mochis is a pioneer of Mexican-Japanese cuisine, blending the vibrancy of Mexico with the precision and elegance of Japan.
The Role Sushi Chef de Partie
As a Sushi Chef de Partie, you will take ownership of the sushi section, ensuring consistency, quality, and precision across every service.
This Sushi Chef de Partie role is ideal for someone with strong technical ability, attention to detail, and a genuine passion for sushi and Japanese cuisine.
Key Responsibilities
Run the sushi section during service with full ownership and accountability
Prepare and present sushi, sashimi, and raw dishes to the highest standards
Maintain excellent mise en place and organisation at all times
Ensure strict adherence to food hygiene, HACCP, and health & safety standards
Handle and store fish and seafood correctly
Monitor stock levels, minimise waste, and support ordering
Work efficiently in a fast-paced, high-volume kitchen
Support and mentor junior chefs
Collaborate with senior chefs on menu development
Requirements
Experience as a Sushi Chef de Partie or strong Demi Chef de Partie
Solid knowledge of sushi preparation, knife skills, and fish handling
Strong attention to detail and presentation
Good understanding of kitchen operations and fundamentals
Ability to work under pressure in a busy environment
Positive attitude and strong team ethic
Desire to grow within an ambitious restaurant group
Full right to work in the UK
