Salary: Up to £48,000
Hours: Full time, lunch and dinner service

The role
Take full ownership of a much loved, chef-founded Sri Lankan restaurant on the edge of London's oldest food market, leading the team and the guest experience across a ground floor dining room and a basement cocktail bar.

What you'll do

• Run the restaurant day to day, across both floors and every service
• Lead, recruit, train and rota a front of house and bar team
• Drive sales, covers and spend per head, reporting weekly to the owner
• Manage labour, stock, cash and the P&L to target
• Keep the room, the team and the guest experience in line with the chef-founder's vision
• Own compliance: licensing, health and safety, allergens

What you'll bring

• Experience as a Restaurant Manager or senior AGM in a busy, independent or chef-led restaurant
• A record of hitting sales, GP and labour targets
• Strong rota, stock and P&L skills
• Personal licence holder (or willing to obtain)
