Food & Beverage Manager Glasgow Large-Scale Leisure & Hospitality Venue

We are recruiting a Food & Beverage Manager to lead a dynamic, high-volume operation within one of Glasgows most exciting and evolving hospitality venues.

This is not your typical F&B role. This is a large, multi-faceted venue combining a busy restaurant, bar, casino floor service, and private events space all operating within a vibrant, late-night environment.
With a restaurant capable of 120 covers, a function suite hosting up to 150 guests, and peak periods reaching up to 400 covers across the site, this is a serious operation with huge potential.
The business is currently undergoing a transformation, with a clear focus on reinvigorating the food and beverage offering and driving covers, revenue, and atmosphere back to where they should be.
This is a role for someone who wants to make an impact someone with energy, ideas, and the drive to take ownership and build something.

This is a hands-on leadership role where you will take full responsibility for the food and beverage operation across the venue.
You will lead from the floor, drive standards, and bring energy back into the team while ensuring the business is commercially successful.
You will oversee a team of around 20 staff, increasing significantly during peak periods, and will also have responsibility for the kitchen team, with the Head Chef reporting into you.
This requires someone confident, commercially aware, and comfortable managing both front and back of house.
Duties:
Oversee all food and beverage operations across restaurant, bar, events, and casino floor service
Lead, motivate, and develop a large and varied team
Drive covers, revenue, and overall business performance
Take ownership of rotas, staffing levels, and labour control
Work closely with the kitchen team, ensuring consistency and quality
Oversee events and private functions, ensuring smooth delivery
Lead from the front during service, particularly in peak evening periods
Maintain high standards of service, presentation, and guest experience
Identify opportunities to grow the business and increase footfall
