What you'll be running
Full ownership of the pass, service standards, and kitchen culture
A brigade of 1015, with responsibility for their development, rota, and progression
Menu development alongside the founding team evolving the concept, not locked to a fixed spec
GP, food cost, and supplier relationships the commercials as well as the craft
Consistency of execution across every service, every plate
